Zucchini Fritters

These simple zucchini fritters are an easy way to turn a few everyday ingredients into a delicious meal. Serve them with poached eggs for breakfast, lunch or dinner, or mix things up with your favourite vegetables, herbs and toppings.

Zucchini Fritters

  1. Make the batter – Add the grated zucchini, eggs, flour, baking powder, shallots, oregano, salt and pepper to a mixing bowl. Add a small amount of milk and mix until you have a thick batter consistency. Add more milk if needed, a little at a time.
  2. Heat the pan – Heat a drizzle of extra virgin olive oil in a frying pan over low-medium heat.
  3. Cook the fritters – Add spoonfuls of the fritter mixture to the frying pan, leaving enough space between each fritter. Cook until bubbles begin to appear on the surface.
  4. Flip – Flip the fritters using an egg flip and continue cooking until golden brown and cooked through.

Poached Eggs

  1. Prepare the water – Add at least 5cm of water to a saucepan and add a dash of vinegar.
  2. Bring to a simmer – Bring the water to the boil, then reduce the heat to a gentle simmer.
  3. Add the eggs – Crack each egg into a small bowl first, or carefully crack them directly into the simmering water.
  4. Cook – Cook for approximately 3–4 minutes for a runny yolk.
  5. Drain – Remove the eggs with a slotted spoon and drain on paper towel or a clean tea towel.

Recipe Notes

  • Test your fritter: Cook one test fritter first to make sure the pan is at the right temperature. If it is too hot, the outside will brown before the centre has cooked.
  • Add gradually: Remember, you can always add more of something, but you can't take it away. Add the milk gradually. If you accidentally add too much, you can add more flour to thicken the batter. Salt is particularly difficult to fix once you've added too much.
  • Fresh eggs: Use fresh eggs when poaching. If you end up with lots of wispy white strands in the water, your eggs may be getting a little old.
  • Mix up the vegetables: Fritters are a great way to use whatever vegetables you have available. Try corn, peas, cauliflower, broccoli, carrot or chickpeas.
  • Change the herbs: Use whichever fresh or dried herbs you enjoy.
