Beetroot & Black Bean Burger Patties

Homemade beetroot and black bean burger patties that are easy to make, packed with flavour and perfect for freezing. They are a great alternative to store-bought veggie patties and can be served in a wholegrain bun with cheese, salad and your favourite sauce.

  1. Roast the beetroot – Preheat the oven to 180°C. There's no need to peel the beetroot. Coat the whole beetroots in extra virgin olive oil and place them in a roasting pan. Roast for 40–45 minutes, or until the centre is soft when pierced with a skewer. Remove from the oven and allow to cool.
  2. Mash the beans – Add the black beans to a large mixing bowl and mash with a potato masher or fork until they are slightly broken down.
  3. Grate the beetroot – Once the beetroot has cooled, grate it directly into the bowl. The skin should naturally remain behind while grating.
  4. Make the mixture – Add the onion, garlic, egg, breadcrumbs, paprika and rosemary. Season with salt and pepper. Mix until all the ingredients are well combined.
  5. Shape the patties – Form the mixture into four large patties. A ½ cup measure is a useful guide for portioning the mixture.
  6. Chill – Place the patties in the fridge for around 30 minutes to help them firm up before cooking.
  7. Cook – Heat a little extra virgin olive oil in a frying pan over medium heat. Cook the patties until browned on both sides and heated through.
  8. Serve – Serve in a wholegrain bun with cheese, salad and your choice of sauce, or enjoy them however you like.

Recipe Notes

  • Freeze for later: These patties can be prepared and frozen raw. Place them in a single layer until frozen, then transfer to a freezer-safe container or bag. Defrost before cooking for a quick and easy meal.
  • Don't peel the beetroot: Save yourself some time and reduce food waste by leaving the beetroot skin on while roasting. Once cooled, the skin is naturally left behind when you grate the beetroot.
  • Make them your own: Experiment with different herbs and spices to change the flavour. Fresh herbs work beautifully too.
  • Build your burger: There are no rules when it comes to toppings. Try different cheeses, salad ingredients and sauces to create your favourite combination.
  • Meal prep friendly: Make a batch ahead of time and keep them in the freezer for an easy meal when you don't feel like cooking from scratch.
