Chilli Peanut Noodle Recipe
A quick and easy rich, spicy and creamy noodle dish perfect for busy weeknight cooking. A delicious combo of peanut butter, chilli oil, garlic, sesame and soy sauce. Finished with fresh cucumber, spring onion and crunchy peanuts.

- Cook the pasta – Cook the pasta until al dente. Reserve 3 tablespoons of pasta water, then drain.
- Prepare the sauce – Add the peanut butter, chilli flakes, spring onion greens, broccoli, sesame seeds, garlic, sugar, crispy chilli oil, rice wine vinegar, soy sauce and coconut milk to a cold pan.
- Heat the oil – Heat the extra virgin olive oil in a small saucepan until very hot.
- Make the sauce – Carefully pour the hot oil over the sauce ingredients and stir until smooth and well combined.
- Add the noodles – Add the cooked noodles to the sauce and toss until evenly coated.
- Adjust the consistency – Add the reserved pasta water, as needed, and mix until the sauce becomes glossy and silky.
- Garnish and serve – Top with spring onion greens, chopped peanuts, julienned cucumber, sesame seeds and additional chilli crisp oil. Serve with a fried egg, if desired.
Recipe Notes
- Adjust the amount of chilli oil and chilli flakes to suit your preferred level of spice.
- The pasta water helps loosen the sauce and gives it a glossy, silky consistency.
- Add a fried egg for extra protein and a satisfying addition to the meal.
